Bacon, and pancakes, and muffins, oh my! I love breakfast, but I am not an early bird. So, being the list-loving girl that I am, I made a breakfast plan to put breakfast on repeat. I want my kids to start their day with a good breakfast to help them focus and learn, and I really love to make childhood fun. This is what I came up with for our weekday breakfast of champions:
- Muffin Monday
- Toast & Eggs Tuesday
- Waffle Wednesday
- Thrifty Thursday
- French Toast Friday
Alliteration is my favorite! Here’s how this works.
MUFFIN MONDAY
On Sunday I make muffins to be eaten on Muffin Monday. Sometimes I will make a double batch and throw half in the freezer so the next Sunday I can put my poor tired feet up and thumb through a magazine instead. Monday mornings the kids eat muffins along with whatever fruit we have on hand or a smoothie. This banana muffin recipe from “Cat Can Cook” has become a breakfast staple. We always have overripe bananas to use up and this recipe is easy, foolproof, and YUMMY! Her recipe calls for 1/2 cup of sugar, and I always reduce that to 1/4 cup of sugar. They still taste fantastic (especially with a few dark chocolate chips tossed in) with very little added sugar.
TOAST & EGGS TUESDAY
Toast & Eggs Tuesday is pretty straightforward, except for the endless riffs on toast of course…avocado toast, anyone? Or maybe put the eggs IN the toast “egg-in-a-hole” style! I usually stick with easy pan-fried eggs, but sometimes we switch it up with scrambled, hard-boiled or even an egg casserole.
WAFFLE WEDNESDAY
Waffle Wednesday works out perfectly for us because Wednesday is a late-start day in our school district so we have an extra hour in the morning to linger over a family breakfast, sharing our hopes and dreams for the day… Any of you rolling your eyes yet…yeah, even with our extra hour, not so much lingering or blissful family time going on.
Mostly the younger two roll in and beg for Nutella and whipped cream on their waffles, while the older one makes gagging sounds and wants to eat in another room because she can’t stand to be close to their stinky chocolate/peanut butter concoctions. Unbelievable that a child sharing my DNA passionately hates chocolate. But they do all love Waffle Wednesday, even when Nutella isn’t on the menu and they are stuck with plain old butter or jam.
Here is the BEST homemade pancake mix that I keep on hand to use for both pancakes and waffles.
THRIFTY THURSDAY
Thrifty Thursday is just as it sounds—leftover day. We use up any leftover waffles, eggs, or muffins, or resort to cereal. Thrifty Thursdays are doubly great for me, because not only are we using up food instead of throwing it away, but I don’t have to cook anything!
FRENCH TOAST FRIDAY
French Toast Friday is an occasional thing. I usually put a little extra effort into dinner on Fridays, so breakfast might be more leftovers, cereal, bagels, or oatmeal. But when we do have French toast, I try to do it on Friday, just for the alliteration. Frittata Friday also makes it into the breakfast lineup on a once-in-a-while basis!
BREAKFAST ON REPEAT – WEEKEND
There are plenty of alliteration options if you are so inclined to keep things going through the weekend. I’ve toyed with Smoothie Sunday, but we have smoothies pretty regularly any old day of the week, so that never really stuck. Here a few additional ideas you could try:
- Frittata Friday
- Fruit Salad Friday
- Mixed Up Monday (let them eat leftovers for breakfast – almost anything you had for dinner last night is more nutritious than sugary cereal)
- Smoothie Saturday or Sunday
- Superfood Saturday or Sunday (try chia seeds, blueberries, nuts, or kefir)
- Worldwide Wednesday (skip the American breakfast and try rice, kasha, legumes, or cucumbers & olives)
There you go…awesome breakfast alliteration to make mornings fun for all us morning and anti-morning people alike!
