Breakfast is one of my favorite meals of the day. Guess who else loves breakfast? The other four people who live in my house. And getting everyone happily fed in the mornings keeps the “grumps” to a minimum. Having a homemade pancake mix allows us to whip up a delicious breakfast even on busy mornings.

We love pancakes and waffles for breakfast, but for some reason, the idea of starting from scratch feels daunting when I have to get kids out the door by 7:30 in the AM. I’ve tried a couple of pre-made pancake mixes, and they’re fine, but this recipe given to me by my mother-in-law is my #1 favorite. It is, without a doubt, the BEST homemade pancake mix. You just toss all the dry ingredients into a snap-top lidded container and give it a good shake to mix it all up. Tape the recipe to the top of the container so you don’t have to go hunting for it when you run low.
When you want to make pancakes, combine your pre-made dry ingredient mix with egg, buttermilk, and oil, and pancakes are served in no time (without any extra chemicals or preservatives)!
Best Homemade Pancake Mix Recipe
Pancake Mix
Ingredients
- 1 c. flour
- 1 c. whole wheat flour
- 2 tbsp sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
Instructions
- Add all ingredients to container.
- Seal tightly and shake to thoroughly mix.
To Make Pancake Batter
- In a large bowl, measure 1 cup of dry pancake mix.
- Add 1 cup buttermilk and stir gently to combine.
- Add 1 egg and 2 tbsp vegetable oil and stir together, making sure to get flour mixed in from the bottom of the bowl.
Notes
Your pancakes will be fluffy and yummy if you use buttermilk, but you can get by with milk if you’re willing to eat flatter pancakes. If you’re out of buttermilk and still want pancakes, put 1 tablespoon of vinegar in a 1-cup measuring cup and add enough milk to fill up the cup. Let the mixture sit while you get your skillet and the rest of your ingredients ready. They won’t be quite as fluffy, but your kids are getting pancakes for breakfast. You whine…no dine, I say.
